INGREDIENTS

2 bone-in ribeye steaks about 1″ to 1 1/2 ” thick

kosher salt 

freshly cracked pepper

1/2 cup unsalted butter, softened

1 tablespoon minced shallots or 1 garlic clove, minced 

1 tablespoon chopped rosemary 

1 tablespoon minced parsley or chives

1 teaspoon fresh lemon juice

1/4 teaspoon fine sea salt

INSTRUCTIONS

  • Preheat grill to high. 
  • Allow the steaks to stand for at least half an hour. 

  • While the steaks rest, mix together butter, shallots or garlic, herbs, lemon juices, salt, and pepper.

  • Spoon the butter onto parchment paper, form into a log, and chill.

  • Season both sides of the steak with kosher salt and fresh cracked pepper to taste. 

  • Transfer seasoned steaks to the grill, and cook for 4 to 6 minutes on each side for medium-rare. 

  • Remove the steaks from the grill and top with butter. Let the steaks rest for 5 minutes and serve.
