2 bone-in ribeye steaks about 1″ to 1 1/2 ” thick
kosher salt
freshly cracked pepper
1/2 cup unsalted butter, softened
1 tablespoon minced shallots or 1 garlic clove, minced
1 tablespoon chopped rosemary
1 tablespoon minced parsley or chives
1 teaspoon fresh lemon juice
1/4 teaspoon fine sea salt
INSTRUCTIONS
- Preheat grill to high.
Allow the steaks to stand for at least half an hour.
While the steaks rest, mix together butter, shallots or garlic, herbs, lemon juices, salt, and pepper.
Spoon the butter onto parchment paper, form into a log, and chill.
Season both sides of the steak with kosher salt and fresh cracked pepper to taste.
Transfer seasoned steaks to the grill, and cook for 4 to 6 minutes on each side for medium-rare.
- Remove the steaks from the grill and top with butter. Let the steaks rest for 5 minutes and serve.
